Hummus-avocado open-faced sandwich


Things have definitely been quiet on the kitchen front.  I mostly go in to fix quickish, routine meals these days.  I am a woman of many passions and don't have enough time and/or energy to juggle all of them at once.  Well that, and it's not in my nature.  I abandoned thinking of multi-tasking as a good thing a long time ago and have never looked back.

I was happy to see that one of my avocados was ripe today.  (Locals, organic avocados on sale at Whole Foods...a bag of four for $4!)

My body has been insistent on being fed protein lately, so rather than my usual avocado on toast with mayo, I decided to swap some hummus in for the mayo.  (My hummus of choice is the Whole Foods house hummus in the "original" flavor.)

I shook on some salt pepper and drizzled the delectable Falconero olive oil over the whole thing.

Oh.  My.  Freaking.  God.  Soooooo good.

I tried not to moan too loudly as I ate since GFCF Kid was sitting across from me enjoying his lunch of something else (he thinks avocados are gross.)

With a couple of bites left, I came somewhat back to earth and thought I'd take a picture.  For you :-)

Now, I know this is not an original sandwich.  And, it's quite likely I've had this combo before.  But, when you're ADDish like me, it is a pleasure of life that wonderful experiences feel completely new because past experiences have been forgotten.

So I present to you, the new-for-me-today: hummus-avocado open-faced sandwich.  Use your most delicious olive oil for this.  It can really make the sandwich sing.

Simple afternoon graze

1+1=1

Honey mustard made by blending Dijon mustard and local wildflower honey right in the dish.  Yum.

sandwich.

Applegate Farms Slow Cooked Ham (we get it sliced at the Whole Foods deli counter when we can, it's much tastier that way) and Food for Life Brown Rice bread.

soup.

Homemade chicken stock poured over chopped and sautéed onion, garlic, ginger, carrot and celery.  Box broth added to cut the over-the-top richness of the homemade stock :-)

last night's popcorn.

root beer.

Sometimes I get overwhelmed.  And stop baking bread.  And can't cook.  And want to go "off" meal plan.

Sometimes the kids aren't hungry when I'm hungry.  Or when one or the other is hungry.

Sometimes root beer on the rocks is the answer.

Sometimes what works is to deconstruct and then deconstruct some more.  And keep it really simple.

Notes to self

We went away for the weekend and I faced my first challenge being GFCF: a long ass car trip and getting a take out dinner on the Cape.

The car trip north was fine, it was the return trip that was hard.  First of all, it was six and a half hours long (it took four and a half hours to get there) and to endure the tedium of a long car trip with little to no "fresh" GFCF provisions was a challenge.  When leaving on a trip from home, the bags and cooler are packed with lots of goodies.  By the time three days away have passed, you've got only dregs left.

The getting take out situation involved the omnivores getting food from a recently renovated and hopping local pizza joint.  Pre-GFCF I would have gotten pizza or a sub.  This time, I knew the only thing I could order from there was a garden salad with oil and vinegar.  So, I did what GFCF Kid always does, pick something from the natural foods section of Cape Cod grandma's local supermarket.

I opted for prepackaged baba ghanoush and a bag of Cape Cod potato chips (and the garden salad from the pizza place).  It was not a bad dinner and I tried not to think about the little bit of preservative in my baba.  GFCF Kid's Ian's GFCF fish sticks were not half bad, in fact, they were kind of tasty.  I never would have tried them had I been inhaling an eggplant parm sub.

Lord help me when fresh seafood season returns on the Cape.  No lobster roll?  No fried scallops?  Waaah.

Easter dinner was no problem.  The ham was GFCF and I had steamed asparagus and salad on the side.  I didn't miss the usual dips and spreads even though they were right there on the table.

PMS has been raging since last night.  Karen's GFCF chocolate bark kept the bad stuff at bay during the right home (filched form the kids' Easter goody bags, my bag got lost in the shuffle somehow).

I broke the cardinal rule this morning when I went provision shopping before eating breakfast (a result of a combo of factors and a really uncharmed morning, to boot).  I had avocado sushi from Whole Foods for breakfast and scrambled eggs with a PMS dollop of spicy Thai chili sauce on toast for lunch and I am about to make pork chops for the kids and me for dinner.

And handfuls of Jelly Belly jellybeans in between.  That's the PMS part.

Also the PMS part?  I am craving Chinese food.  Big time.
